The values in a map defined in a schema always default to strings, even though you can define them with other Schema.Elem types.

This implements converting the string values in a map to the requested primitive types.

Supersedes #8104 (the source branch is from another fork)

Convert the value to the correct type when reading a diff and the map
schema has an primitive Elem type.
Now that we can read primitive type out of a map, each field reader
needs to be able to set the proper type as expected.
