Correct hostname and 'root' user in PostgreSQL deployment example #3682

Updates the deployment example added in #3675 to help make the Cloud Build tests in google/certificate-transparency-go#1618 succeed.

With this PR, everything starts up OK when I run docker-compose -f examples/deployment/postgresql/docker-compose.yml up -d postgresql trillian-log-server trillian-log-signer locally. (Whereas previously the log-server container could not connect to postgres).
