This PR updates the CI configurations to use the
checkoutaction with versionv2instead ofv1. The default behavior withv2is to pull only the last commit of the repository; versionv1pulls the entire history. This should make the built docker images significantly smaller (the current full git history saved in the images is ~2Gb) and should help the CI process go slightly faster
