Updated the wording and information on all the stacking and signer related pages. With this occasion, I've also updated the stacks-node and stacks-signer versions across all pages to use the latest currently released (3.1.0.0.5 and 3.1.0.0.5.0 respectively).

Some minor changes that will make future updates for versions less annoying, otherwise looks good!
