Add a selector -> chain families mapping as a separate YAML file. The reason I didn't add this to the existing YAML file is that the existing file is already EVM specific. We probably need to refactor it to be less EVM specific but that'd be a pretty big breaking change.
CCIP v1.6 only needs the chain family from the selector, as it doesn't use chain IDs anywhere.
