Update README with versioning information and examples

The README text was revised to provide more detailed information about the image versioning system. It now clarifies the implications of subscribing to different tags. Moreover, the version reference was changed from 'v1' to '1' in the CLI examples. Another section was also added showing how to subscribe for bug fixes only. The example repository links were also updated.
