This issue is to help organize the workload of updating all our tutorials to reflect the latest monthly tag. Soon we will be setting things up such that all tutorials will follow latest but for now this will ensure all tutorials work with monthly-2021-11-1 which presently is the latest version of the node template. More context on this issue in #588.

UPDATE: All node template solutions use the latest branch as well as the devhub/latest tag from upstream. ✅

For this pass on our tutorials, general changes to look out for:
