This makes it easy to override them for integration with other model libraries (e.g. sequelize, which uses #build instead of #new).

This branch exposes
Factory.saveandFactory.instantiate, which can be easily overridden if you are using a model library that doesn't usenewand.save(cb). Also updates the README with some spec details.
