NGF overview diagram is unreadable at standard browser zoom levels

Describe the bug

On the NGF Overview page, the architecture diagram is very difficult to read without increasing the browser's zoom level to 200%+. This is seen at the 1024 and above responsive breakpoint.

To reproduce

Steps to reproduce the behavior:

1. Set browser to standard zoom level (100%)
2. Navigate to the diagram
3. Try to read the diagram without zooming in is difficult.

Expected behavior

Should be able to read the diagram.

Google Chrome, OSX, window size CSS media breakpoint 1024+, zoom level 100%

Even after improving how we handle mermaidJS, this diagram specifically might need to be broken into several smaller ones
