I have tried many "allegedly" monospace fonts and none line up. Not sure if it's some CSS setting from https://github.com/jbms/sphinx-immaterial or the upstream https://github.com/squidfunk/mkdocs-material.

I'm choosing to resolve this by reverting the use of box drawing characters. The beauty of Roboto Mono outweighs the beauty of a box with box drawing characters.

Now the arithmetic table displays like this:
