[#4506] Update e2e test name to be clearer (#4689)

- the file's name namespace_default_channel_test.go is a bit confusing with channel_defaulter_test.go. The former is asserting the webhook sets the appropriate defaults and the latter is checking the resulting channel is functional. Signed-off-by: Sameer Vohra <vsameer@vmware.com>
