Change Assist satellite state names

Proposed change

Change some of the Assist satellite state names to be more in line with the original proposal, specifically:

• listening_wake_word becomes idle
• listening_voice_command becomes just listening

• Bugfix (non-breaking change which fixes an issue)

• New feature (which adds functionality to an existing integration)
• Deprecation (breaking change to happen in the future)
• Breaking change (fix/feature causing existing functionality to break)
