feat(mdx-loader): upgrade to MDX v3

Breaking change

• Upgrade to MDX v3, see few minor breaking changes reported here: https://mdxjs.com/blog/v3/
• Upgrade Remark-Emoji from v2 to v4, removes old emoji shortcodes. See minor breaking change in changelog: https://github.com/rhysd/remark-emoji/blob/master/CHANGELOG.md

Motivation

MDX v3 is out, but Docusaurus v3 is around the corner.

It's a small release so let's see if we can include it or if we'll keep it for Docusaurus v4.
