[ML] Transforms/Analytics: Improve data grid field formatting

• Field formatting should be improved. Can we use Kibana Index Patterns for this but make them optional? E.g. limit floats to 3 decimal places, display bytes as KB/MB etc, better time field format. In the transform source table and the preview table, consider using Kibana field formatter for values. Too high precision here, compared with Kibana Data Table viz. ([ML] EuiDataGrid ml/transform components. #63447)

• Field names containing dots must be supported (fixed in [ML] Fix color coding for outlier detection. Fix nested fields for data grid. #80467)

Looks like #80467 might have fixed some of the issues related to displaying object fields / fieldnames containing dots here. For example:

Note that #63447 introduced the use of the field format defined in the source index pattern for formatting cell values in the source index data grid.
