[Maps] Should allow custom min-max data ranges for ordinal styling of sizes

Data-ranges for sizes (symbol size, border width, ...) cannot be customized in by-value styling in Maps. The underlying data range is either derived from the extended-stats (in ES-case) or from inspecting the raw geojson results.

Users may want to manually specify custom data-ranges for the size to apply

e.g.:

100 => 5px
200 => 10px
500 => 15px

This would behave similar to how users are able to configure custom number and category stops for color-styling.

This is also important for data-sources like 3rd party vector tiles, since Maps cannot "automagically" determine the domain of the values inside the tiles.
