Use new build of nginx container (from https://github.com/avalonmediasystem/avalon-docker/tree/minio-jammy) and externalize logs
Use newest build of minio and change bucket policy for anonymous read access (Note: don't use this in production and expose this port to the outside world! Also note that the minio dashboard is on port 9090 now.)
