[Search] [Playground] Improve model_id detection (elastic#184261)

## Summary

In order to perform semantic search, we need to detect the model_id used
by the inference processor. We do this currently by performing a search
for a single document and looking up the values in the source.

The issue is that some documents may have failed to be infered or where
the field is missing. This means there is a chance where the model_id is
missing from the source and we are unable to detect it.

This change performs a term aggregation on the model_id fields instead.
