Describe the bug

Valkey-GLIDE can't run on older systems like Ubuntu 20 or Amazon Linux 2

Expected Behavior

Valkey-GLIDE can run on older systems like Ubuntu 20 or Amazon Linux 2

Current Behavior

Depends on the binding, error message could include

undefined reference to `dlsym'

or

version `GLIBC_2.34' not found

Reproduction Steps

On an Ubuntu 20 or Amazon Linux 2 OS, create a minimum project with one of the binding languages, import Valkey-GLIDE, and try to build/compile/run.
