[TASK] Integrate new ERC-20 bridge tokens into restaking

Once the bridge PR that adds ERC-20 bridge tokens (#2744) is up and merged, need to integrate the token list into the restaking system. Only basic information is needed: Name, symbol, contract address, etc.

• Wait for the bridge PR to be merged
• Integrate ERC-20 token definitions from bridge into restaking
• QA & test restaking those ERC-20 assets on testnet
