examples show quay.io/sallyom/otel-collector-contrib image but need to switch to using upstream contrib

The Containerfile results in a RHEL based otel-collector-contrib image. Without this, the examples for gathering systemd logs fails, due to lack of journalctl in the container. For now, I'm keeping the images as/is & RHEL based
