We are using the Set-PnPSearchConfiguration in our project https://github.com/microsoft/Microsoft365DSC and having issue calling the Set-PnPSearchConfiguration to update changes to managed properties. We can create new managed properties with no issue but anytime we want to update the property it doesn't work, no error message generate from PNP. I'm not sure if its they way I'm calling the cmdlet or a possible bug in PNP but repro steps I followed are below.
Create new managed property in UI
Export the config by calling Get-PnPSearchConfiguration -Path searchconfig.xml -Scope Subscription
Manually updated a field for example description of managed property
