From phetsims/quadrilateral#429, it was discovered that starting in iOS 16, sounds do not play from drag and drop. You have to tap the screen (like a single button press). @jbphet investigated this issue and identified it is related to the autoplay policy. See phetsims/quadrilateral#429 (comment) for a good description of the issue.
Maybe some iteration this can be investigated with extra common code work. As suggested in phetsims/quadrilateral#429 (comment), that might include a bug report to Apple.
