Is there a way to change language of emails ? (customize it)

Or should we create a copy with a different base language and change the way how the template is selected during invitation from Admin Portal ?

Assuming you mean for the custom ThemeProvider?

100% of our customers have only required English to date, so we haven't implemented template creation/selection by locale.
