Tracking issue for Mojaloop Helm breaking changes (after v13.0.0) for v14

The goal of this issue is to consolidate all potentially breaking changes to Mojaloop Helm v13.0.0, and thereby consolidating to have a solid Mojaloop (helm) release for v14.0.0 and minimize any breaking changes after that (until the reference architecture workstream publishes an initial working release)

In the interim, there will be a patch release made for v13.0.0 (v13.0.1 issue #2343 ) to make the best use of bug fixes made after the initial helm v13.0.0 was released.

Candidates for this include:

1. GitHub repo renaming to follow newly adopted standards issue Update repos to use new mojaloop naming conventions #2266
2. Cleanup of dependencies & repos Core Service dependency and repo tidy up #1060
3. Removing external dependencies from Mojaloop helm charts issue Remove external dependencies that are tightly integrated into the Mojaloop Helm Chart #1852
4. Baseline chart versions to v14
