Deployment Guide using minikube instead of microk8s

Would a contribution to the Deployment Guide documenting how to get it up and running using https://github.com/kubernetes/minikube instead of microk8s be welcome? Thought I'd better ask before starting to send PRs for it... 😃

Perhaps as a first step / pre-requisite, we could do an initial round of clean up, before anything about Minikube, to make https://docs.mojaloop.io/documentation/deployment-guide/ not mention microk8s, and keep that to the Local Setup Linux/Mac/Windows pages? IMHO the "main" guide really should only mention kubectl and helm - you should be able to follow those steps AFTER one has appropriately set up whatever local Kube distro is fancy this month - or any remote cloud hosted kube. Hope you see what I mean, and this makes sense? I could raise a PR to illustrate for discussion, but again thought it's the kind of thing perhaps best first politely asked about!
