Sonoff's DIY Mode tool (in that same repo you linked) is able to flash custom firmware onto supported devices. Or at least it should be able to.

Most devices do not come with this DIY mode (even if you were to open them and pull GPIO16 low). There is simply no way to use the DIY mode RESTful API.
