It turns out Material Design Icons icon pack contains a TV ambilight icon: http://materialdesignicons.com/icon/television-ambient-light

Can you try adding this icon to your custom component?

Side note: I tried changing the icon from the Home Assistant interface, but I can't. (This entity does not have a unique ID, therefore its settings cannot be managed from the UI.)

You can use the customize option, just not lovelace.
