Problem
We need a default event payload size for testing the default setup in #1552.

Exit Criteria
We have a default event payload size documented.

Additional context (optional)
This can be based on average event sizes emitted by GCP sources. The CloudEvents spec recommends all intermediaries and consumers accept events of at least 64K.

Decided to use 256K as the target.
