[Epic] Provide Privacy manifest and docs

A lot of the work has already been done, this is to track the remaining tasks to ensure we got our bases covered with tests and docs.

For docs, we started with the RN page because the usage scenario is the most complex there. We can copy this for all other relevant platforms afterwards.
