Currently you have: "A diet which provides > 60% of total dietary energy from carbohydrates. It consists predominantly of high glycemic carbohydrates have detrimental metabolic effects"

Its good to be minimal about the definition and possibly place the more analytic commentary in rdfs: comment ? So maybe just: "A diet which provides > 60% of total dietary energy from carbohydrates." . Now, is there a source paper or agreed upon standard for the 60% figure? I'm not seeing any definition source info.
