Preheat griddle over medium low heat. Grease with canola oil before each batch.
Mix dry ingredients:
- 120 grams flour, sifted
- 19 grams sugar
- 3.6 grams (3/4 teaspoons) baking powder
- 3.6 grams (3/4 teaspoons) baking soda
- 4.5 grams (3/4 teaspoons) kosher salt
In a separate bowl, mix wet ingredentients:
- 1 large egg, gently beaten (do not introduce air)
- 300 grams buttermilk (or whole milk + 15 grams white vinegar)
- 1.5 tablespoons butter, melted
- 1 teaspoon vanilla extract
Optionally, add any additional ingredients to the wet, such as:
- Fruit (blueberries, strawberries, apples, etc)
- Chocolate chips
- Nuts (pecans)
Make a well in the center of the dry ingredients. Pour in the wet ingredentients and slowly incorporate together until just combined (lumps are desirable).
Serve with:
- Maple syrup
- Melted butter
- A salty protein
