Pancakes

Preheat griddle over medium low heat. Grease with canola oil before each batch.

Mix dry ingredients:

  • 120 grams flour, sifted
  • 19 grams sugar
  • 3.6 grams (3/4 teaspoons) baking powder
  • 3.6 grams (3/4 teaspoons) baking soda
  • 4.5 grams (3/4 teaspoons) kosher salt

In a separate bowl, mix wet ingredentients:

  • 1 large egg, gently beaten (do not introduce air)
  • 300 grams buttermilk (or whole milk + 15 grams white vinegar)
  • 1.5 tablespoons butter, melted
  • 1 teaspoon vanilla extract

Optionally, add any additional ingredients to the wet, such as:

  • Fruit (blueberries, strawberries, apples, etc)
  • Chocolate chips
  • Nuts (pecans)

Make a well in the center of the dry ingredients. Pour in the wet ingredentients and slowly incorporate together until just combined (lumps are desirable).

Serve with:

  • Maple syrup
  • Melted butter
  • A salty protein
