Errors when writing to a file formatted in UTF-16LE

If you try to write to a file that's encoded in anything other than UTF-8 Continuum will blow up in my case if I try adding the debug text POTATO to a text file formatted in UTF-16LE rather than getting the word POTATO I get 佐䅔佔

Also, I forgot to say the byte offsets are all wrong wean writing to a UTF-16LE file
