Missing OCR languages

Description
On a fresh install of Papermerge 3.4 (with Docker Compose) seems there are some missing OCR languages

According to https://docs.papermerge.io/3.4/setup/add-ocr-langs/ there should be a lot more included (I'm interested in particular to the Italian language).

Also, as a side node, that docs refer to "apt install" in order to add additional packages to the custom image, but the one being pulled with the tag "papermerge/papermerge:3.4" is based on Alpine (so using apk instead of apt)
