Caramelised Onions |

- 1 Onion
- 1 tsp Extra virgin olive oil
- Butter (optional)
- Salt
- ~1/4 tsp Sugar
- Balsamic vinegar
- Slice onions in thin 'wedges'
- Heat oil and butter on medium high heat in large pan
- Add onions and stir to coat with oil and spread out; reduce heat to medium - medium-low
- Cook for 30-60min - stir occasionally (every few minutes) until a rich brown colour
- After 10min, sprinkle with salt and sugar
- If it starts to dry out, add some water
- If it starts to burn, add some oil
- Lower temperature after 20-30min
- Add some balsamic vinegar to deglaze pan and add more flavour
