Updating Auth0 TF provider version to minimum 1.0.0

🔧 Changes

Updating the version for the Auth0 Terrafrom Provider ahead of its v1.0.0 GA release. This will ensure that Terraform will pull the latest version but at least v1.0.0.

Also, added a reference to the auth0 tf generate command in the README.

🔬 Testing

Tested locally. Will pass integration tests once Auth0 TF Provider v1 GA gets released.
