Lock/pin conda environment #5

Suggest we use conda-lock so we make sure everyone is using exactly the same environment.

Not so easy...

I tried with conda-lock installed via mamba, and hit this issue: conda/conda-lock#381

Then I tried with --no-mamba and hit this issue: conda/conda-lock#380

I might fall back to doing something manual for the time being.
