Pour Over

Chemex

Bodum Pour Over

  • Ca. 480 gr/ 480 ml water
  • Ca. 32 gr freshly grinded medium to fine ground coffee

Intro

Always use clean water. Remember to moisten the filter. This method works best with something like the classic Chemex or the Bodum Pour Over Coffee Maker, which is described here. Make sure the coffee maker is nice and clean. If the grounds are too fine, the coffee might get a more burnt taste. See this thread for additional hints.

Instructions

  • Wet a paper filter and put in in the coffee maker.
  • Add the coffee to the filter
  • Pour 60 grams of hot water evenly over the grounds.
  • Allow the coffee to bloom for about 35 seconds.
  • Pour water in a circular fashion up to 250 grams.
  • At 250 grams, give the coffeemaker a couple of swirls to keep the coffee bed flat. This helps with extraction.
  • Pour the rest of the water in a circular fashion, up to 280 grams total.
  • Give the coffeemaker a last couple of swirls.
  • Allow the coffee to drip through the filter and in to the coffee maker (should take around 3:00 - 3:30 minutes).
  • Remove the filter when the filter has stopped dripping.

Chemex - Center pour method

  • Ca. 700 gr/ 700 ml water
  • Ca. 52 gr freshly grinded medium/filter ground coffee

Intro

Always use clean water. Remember to moisten the filter. This method works best with something like the classic Chemex or the Bodum Pour Over Coffee Maker. Make sure the coffee maker is nice and clean.

Instructions

  • Wet a paper filter and put in in the coffee maker.
  • Add the coffee to the filter
  • Pour 100 grams of hot water evenly over the grounds.
  • Allow the coffee to bloom for about 1 minute and 30 seconds.
  • Pour some of the remaining 600 grams of water over the grounds, up to the upper level in a circular fashion.
  • When all the grounds are wet, move the kettle to the center and pour the rest of the water consistently.
  • Allow the coffee to drip through the filter and remove it after 4.5 minutes.

Chemex / Bodum Pour Over - Iced coffee

  • Ca. 466 gr/ 466 ml water
  • Ca. 50 gr freshly grinded filter ground coffee
  • Ca. 234 gr ice

Intro

The Chemex is great for making a batch of iced coffee. Remember to moisten the filter and clean the coffee maker.

Instructions

  • Add the ice to the coffee maker.
  • Wet a paper filter and put in the coffee maker.
  • Add the coffee to the filter.
  • Pour the hot water (all 466gr/466 ml, there is no need for bloom here) evenly over the grounds in a slow and spiral fashion. Allow 10 to 15 seconds go when the water covers all the coffee before doing another spiral pour.
  • Remove the filter when it's done dripping.
  • Add some ice cubes to a class and pour.
