I'm not aware of what games or applications exactly rely on Japanese charactersets, but allegedly one can set LANG=language_region as an environment variable for this? Apparently it relies the language file being present in /usr/share/i18n/locales? Otherwise there isn't any immediately obvious way to e.g. have Japanese games show their fonts properly.
Ideally, this should be per-shortcut only.
A look back into how Bottles sets this might be helpful.
