Document main stable branches and their differences #21

Currently the main stables branches are v5 and v3-legacy, but this is not documented and their differences are only in source code so one has to compare them to know which one to chose.

Add the following information to README :

  • main stable branches
  • peer dependencies : ruff, djlint, docker, etc.
  • differences of the 2 branches
