feat: Update config.yml defaults when updating from older versions

Once an update has been released, people will not be expected to delete and redo their entire config.yml file, and instead should automatically have it updated when the plugin loads and sees inconsistencies.

• Create a Version field in config.yml
• Have the plugin update the file accordingly with the default values when a new version of the plugin is loaded
