Add an option in metrics translator that only renames system/process metrics but not remap

Add a similar option to WithRemapping https://github.com/DataDog/opentelemetry-mapping-go/blob/main/pkg/otlp/metrics/config.go#L58 but only renames metrics without adding the DD counterparts. This is useful in converged agent use case where the DD counterparts are collected by core agent.
