I've tried to run the script on Ubuntu 16.04 but sadly it crashes as soon as you launch it. Is there a possible fix for this? I would like to use it with the freshly ported to linux, Dirt Rally.

I haven't yet run this or other arduino things under linux just yet. Assuming that the ported Dirt Rally exposes the same data, this should work, I think.
Do you see any errors when it crashes?
You can change the configuration for the arduino port in config.yml. What do you have yours configured to? I think it should be something like /dev/ttyUSB0 or similar.
If I run it in the terminal nothing comes up and it turns my cursors into a crosshair. If I click on anything with that crosshair it takes a screenshot of it. Seems very strange. I've got in contact with "Feral" the company that ported Dirt Rally to linux. They said currently the UDP server in not implemented but they will work on it for the next update. Here is a screenshot of gauge.py running. This screenshot shows the mouse cursor normal but on my end it is a crosshair.
